Pink Pasta

The perfect pink pasta recipe with a picture and simple step-by-step instructions.

  • 250 g Penne
  • 2 Beetroot fresh
  • 1 small Clove of garlic
  • 1 Onion
  • 1 squeezed Orange
  • 50 ml Vegetable broth
  • 100 ml Plant cream
  • 1 tsp Fennel seeds
  • 1 Star anise
  • Pepper
  • Soy sauce
  • Postelein, rocket or lamb’s lettuce to taste
  1. Cook the pasta as usual.
  1. Finely dice the beetroot and onion. Sauté in a little oil. Squeeze the garlic.
  1. Pour in the orange juice and stock. Put the spices in a tea bag and hang in the pot. Let simmer for 20 minutes.
  1. Remove the spices in the tea bag. Pour in the plant cream and roughly puree. Season with soy sauce and pepper.
  1. Mix the pasta with the sauce. Put the salad on a plate and serve the pasta on top.
