Cakes and Pies: Moni’s Sunken Mandarin Cake

- 4 Pc. Free range eggs
- 200 g Spelled flour
- 125 g Sugar
- 125 g Soft butter
- 1 tsp Baking powder
- 1 kg Mandarin wedges
- First, peel the mandarins, cut into wedges and cut into bite-sized cubes.
- Put the spelled flour, the sugar, the warm butter or margarine, the eggs and the baking powder in the mixing bowl and stir everything into a smooth dough. Then fold the tangerine cubes into the batter.
