Rice Pot with Meatballs
The perfect rice pot with meatballs recipe with a picture and simple step-by-step instructions.
- 1 Pc. Vegetable onion
- 500 g Mixed minced meat
- 50 g Rice pudding
- 1 Pc. Finely diced onion
- 500 g Rice
- 500 g Carrots
- 3 tbsp Salt
- 2,5 liter Water
- 2 Pc. Eggs
- Finely chopped parsley
- 1 Pc. Celery
- Halve the vegetable onion and burn with the cut surface unpeeled on the bottom of the pot over medium heat. As soon as the cut surface has got a good amount of color, add 2.5 liters of cold water and approx. 3 level tablespoons of salt. Not too much salt, better to taste and season again later.
- Finely dice the normal onion and mix with the mince, rice pudding, pepper, salt and two eggs until a fine, firm paste is formed. Season well with salt and pepper. Shape the mince into dumplings with wet hands. Add the meatballs and the celery and bring to the boil. Skim off the foam.
- Meanwhile, clean and dice the carrots, wash the rice 2-3 times with cold water. Then the broth will not turn cloudy.
- After about 10 minutes add the carrots and rice and simmer over low heat for about 20 minutes. When the rice is soft, season with salt and pepper and add parsley. I took dried ones. The rice swells up, only then does the soup turn into a rice pot 😉 Meal!
