Snail Apple Strudel
The perfect snail apple strudel recipe with a picture and simple step-by-step instructions.
Pastry:
- 300 g Wheat flour type 405
- 125 ml Lukewarm water
- 1 tsp Vinegar
- 1 tbsp Vanilla sugar
- 1 Pc. Egg
- 50 ml Oil
- Flour for rolling out the dough
Filling:
- 200 g Vanilla sugar
- 1 kg Granny Smith apples
- 50 g Hazelnuts
- 50 g Rum raisins
- 150 g Breadcrumbs
- 100 g Butter
- Juice of one lemon
- Zest of the lemon
- 1 tbsp Cinnamon
- 1 tbsp Amaretto
Decoration:
- 100 g Almond leaves
- 20 g Colorful chocolate sprinkles
- 200 g Powdered sugar
- Juice of one lemon
- Water a little
- Sift the flour into a bowl, boil the water with vinegar and sugar lukewarm (body temperature), stir in the oil, whisk the egg and mix with 1/3 of the liquid butter and add to the flour, stir in lukewarm water with vinegar and sugar and stir vigorously knead. Shape the dough into a ball, brush with oil and leave to rest in a warm place for about 15 minutes. After resting, roll out the dough into a rectangular shape with a rolling pin and pull it out with the heels of your hands to form a strudel dough. (Newspaper starch) Brush with melted butter and top with the filling.

- Cut or slice apples into small fans, add lemon zest and the juice of one lemon, caramelize the hazelnuts with a little sugar, bring the raisins to the boil in a little rum or mix in the finished rum raisins, toss the breadcrumbs in a pan with the butter, vanilla sugar with a pinch of cinnamon Mix and add to the apple mixture, add the amaretto as desired and refrigerate briefly to steep. Then put the apple mixture in a large saucepan and simmer briefly on the stove for 3-5 minutes under low heat. Spread the finished apple mixture on the pulled out strudel dough in the lower third, spread the rest on top of the dough. Also distribute the butter crumbs on top and carefully wrap everything loosely with a swirl towel. Brush the strudel with a little milk and bake at 160 degrees for about 30-40 minutes. After removing the strudel, quickly brush with butter and serve lukewarm.
Decoration
- Make a frosting with the lemon juice, powdered sugar and a little water. Spread the icing on the strudel and decorate with sugar sprinkles and flaked almonds.
