Thuringian Soljanka

The perfect thuringian soljanka recipe with a picture and simple step-by-step instructions.

  • 300 g Jagdwurst
  • 50 g Salami
  • 1 Carrot
  • 200 ml Pickled cucumber stock
  • 4 Gherkins
  • 1 Onion
  • 4 tbsp Soup vegetables
  • 4 tbsp Frozen celery leaves
  • 200 ml Apple juice
  • 100 ml Tomatoes happened
  • 1 Splash Lemon juice
  • Sunflower oil
  • 200 ml Tomato ketchup
  • Salt
  • Pepper from the grinder
  • 3 tbsp Sweet paprika powder
  1. Dice the sausage and fry in vegetable oil until crispy. Roughly chop the onion and add to it.
  1. Grate the carrots and sauté them with the soup vegetables and celery greens in the same saucepan.
  1. Deglaze with cucumber water and apple juice and add the tomatoes and ketchup – bring to the boil.
  1. Chop the cucumber and add to the solyanka. Season with salt, pepper and paprika.
  1. Season to taste with lemon juice and ideally let it steep overnight.
