Thuringian Soljanka
The perfect thuringian soljanka recipe with a picture and simple step-by-step instructions.
- 300 g Jagdwurst
- 50 g Salami
- 1 Carrot
- 200 ml Pickled cucumber stock
- 4 Gherkins
- 1 Onion
- 4 tbsp Soup vegetables
- 4 tbsp Frozen celery leaves
- 200 ml Apple juice
- 100 ml Tomatoes happened
- 1 Splash Lemon juice
- Sunflower oil
- 200 ml Tomato ketchup
- Salt
- Pepper from the grinder
- 3 tbsp Sweet paprika powder
- Dice the sausage and fry in vegetable oil until crispy. Roughly chop the onion and add to it.
- Grate the carrots and sauté them with the soup vegetables and celery greens in the same saucepan.
- Deglaze with cucumber water and apple juice and add the tomatoes and ketchup – bring to the boil.
- Chop the cucumber and add to the solyanka. Season with salt, pepper and paprika.
- Season to taste with lemon juice and ideally let it steep overnight.
