Pasta Salad Made from Leftovers

The perfect pasta salad made from leftovers recipe with a picture and simple step-by-step instructions.

For the marinade:

  • 1 piece Diced from the carrot
  • 1 Onion
  • 2 Gherkins
  • 4 Hard-Boiled eggs
  • 4 Discs Cooked ham
  • 1 Cup Canned corn kernels
  • 1 tablespoon Chive rolls
  • 1 tablespoon Mayonnaise 80% fat
  • 2 tablespoon Yogurt 10% fat
  • 2 tablespoon Pickled cucumber stock
  • 1 pinch Sugar
  • 2 Pinches Salt
  • Black pepper from the mill
  • 2 Splash Maggi
  1. Cook the pasta with the diced carrots in salted water until they are firm to the bite and then pour them into a colander to drain and cool. Finely dice the cucumber, boiled ham, onion and the hard-boiled eggs and place in a bowl with the drained carrot noodles.
  2. Pour the corn kernels, chives rolls and all the ingredients for the marinade on top, mix well and let the salad soak in the fridge for a few hours. Season again to taste before serving.
  3. We took this leftover pasta salad with us on a trip as provisions and simply ate it with cold meatballs.
