Pasta Salad with Lukewarm Basil Dressing
The perfect pasta salad with lukewarm basil dressing recipe with a picture and simple step-by-step instructions.
Basil dressing
- 1 piece Lemon fresh
- Pepper from the grinder
- Salt
- 100 ml Olive oil
- 1 tablespoon Balsamic vinegar
- 1 teaspoon Dijon mustard
- 1 tablespoon Food starch
- 125 ml Mix water for the cornstarch
- 1 bunch Basil
salad
- 200 g Penne
- 1 piece Small cucumber
- 0,5 glass Tomatoes pickled in oil
- 0,5 glass Artichoke hearts
- 0,5 glass Olives
- 8 piece Cocktail tomatoes
- Parmesan cheese
- Pepper
- Salt
- Olive oil for frying
- Cut the chicken fillet into mouth-sized pieces, sprinkle with pepper, salt and lemon juice. Fry them nicely on all sides in olive oil and allow to cool.
- Cook the pasta according to the instructions on the packet and allow to cool.
- Slice the cucumber, cut the artichoke hearts and the pickled tomatoes into small pieces if necessary. Cut the olives into rings. Halve the cocktail tomatoes. Mix everything together with the meat and pasta.
dressing
- Bring the olive oil, balsamic vinegar, pepper, salt and Dijon mustard to the boil, remove the saucepan from the plate and bring the mixed cornstarch to the boil for approx. 1-2 minutes while stirring.
- Put everything in a tall container, add the basil and mix with a hand blender to make a dressing.
- Fold the dressing into the salad. If necessary, season again with salt and pepper.
- Pour the Parmesan over the salad.
