Kangaroo Medallions with Grilled Mango
The perfect kangaroo medallions with grilled mango recipe with a picture and simple step-by-step instructions.
For the steaks
- 4 Pc. Kangaroo medallions
- Salt
- Pepper
- Pimenton de la vera
For the mango
- 1 Pc. Mango
- 2 tbsp Rapeseed oil
- 0,5 tsp Chilli flakes
- 1 branch Thyme
- 0,5 Tl Garlic powder
- 0,25 Pc. Star anise
- 50 g Bacon cubes
- 1 branch Mint
- 2 Branches Fresh coriander
- Season the medaillions as desired (or with the ingredients listed). Peel the mango and cut the meat into 1 cm thick slices from the stone. Mix a marinade from the oil and the spices and place the mango slices in it
- Fry the bacon cubes in a pan until crispy, mix with the chopped mint and coriander. Grill or fry steaks to the desired degree, grill or fry the mango slices in a pan as well
- Cover the mango slices with the bacon and herb mixture and serve with the medallions.
