Carrot Casserole with Boiled Potatoes
The perfect carrot casserole with boiled potatoes recipe with a picture and simple step-by-step instructions.
Boiled potatoes
- 750 g Potato freshly peeled
- 1 pinch Salt
- 1 tsp Vegetable stock grain in-house production
- 1 piece Pot suitable for the 750 grams of potatoes
- 1 piece Water enough to just cover the potatoes
Carrot casserole
- 750 g Home-Grown carrots peeled and sliced
- 600 g Goulash mixed by the butcher I trust
- 1 piece Freshly diced vegetable onions
- 2 piece Garlic cloves chopped
- 0,5 piece Finely chopped red chilli pepper
- 0,75 liter Vegetable broth own production
- 0,5 piece Red peeled and chopped red peppers
- 1 pinch Sea salt from the mill
- 1 pinch Black pepper from the mill
- 1 pinch Cayenne pepper
- 1 pinch Sweet paprika
- 1 pinch Sugar
- 1 some Finely chopped parsley from our own garden
- 1 Can Canned tomatoes peeled small tin
- 1 some Rapeseed oil
- We always have this pot in variations. Sometimes the potatoes are included and it is also delicious without meat.
- Heat the water, cut the potatoes peeled with a peeler in half or quarter (depending on thickness), add to the water, add salt and vegetable stock and bring everything to a boil. Then (depending on size) cover and simmer for 15-20 minutes (fork test). Then pour off the water and serve the potatoes in a preheated bowl.
- Sear the meat in the oil. Add the onions and peppers and fry for a few minutes.
- Add the garlic and chilli and sauté briefly. Then add the canned tomatoes and pour on the broth. Bring everything to the boil once and season to taste with the spices. Put the lid on and cook the goulash at a low temperature until the meat is almost soft.
- Now add the carrots and simmer them until they are done. Season everything again to taste and stir well. Serve the carrot casserole in a preheated bowl with the boiled potatoes. Serve the parsley in an extra bowl. Then everyone can sprinkle them as much as they like.
- I am not binding the sauce. I like it when it is a little more fluid. Then “man”, but also “woman” can mash the boiled potatoes nicely in the sauce. You are not allowed to do that in a pub.
