Currant Muffins Daniela

The perfect currant muffins daniela recipe with a picture and simple step-by-step instructions.

  • 200 g Red currants, carefully weighed
  • 250 g Flour
  • 2 Tl Baking powder
  • 0,5 Tl Baking soda
  • 1 Tl Lemon juice, I only had limes
  • 1 Egg, free range
  • 120 g Sugar
  • 80 ml Neutral oil
  • 200 ml Buttermilk
  • 1 pinch Salt
  1. Mix the flour with the baking powder and baking soda.
  2. Then mix all the other ingredients – not yet currants – together and stir with the machine.
  3. Finally fold in the currants. Then put in muffin tins. Fill them only 2/3 full and bake at 180 degrees for about 30 minutes. Chopstick sample!
