Salad: Potato Salad with Kidney Beans and Baby Corn
The perfect salad: potato salad with kidney beans and baby corn recipe with a picture and simple step-by-step instructions.
Ingredients for the sauce:
- 1 small Can of kidney beans
- 8 Baby corncobs
- I have fresh chives in the garden, about 1 bunch
- 150 g Sour cream
- 1 El Majo
- 1 Tl Grapeseed oil, of course other oils are also suitable
- 1 El Low-Fat natural yogurt
- 0,5 Tl Salt
- 3 Pinches Pepper
- 3 Pinches Cayenne pepper
- Little sugar, please to taste
- 1 Tl Mustard
- 0,5 Tl Mediterranean herbs, own production
- Boil and peel the potatoes and cut into slices or small cubes as you like
- Wash and chop the chives
- Put kidney beans and corn in a colander and drain
- Stir all ingredients for the dressing until smooth and pour over the potatoes, mix in the chives and let stand for about 1 hour to steep.
