Ingredients
from the comb:
- 3 Pc. Pork chops
Spice up :
- Coarse salt
- Black pepper from the mill
- Sweet paprika
Breading:
- 1 Pc. Egg whisked
- Breadcrumbs
Grill :
- 2 tablespoon Clarified butter
Diced:
- 600 g Peeled waxy potatoes
- Coarse salt
- 1 tablespoon Margarine
Blanching, quenching:
- 1 Pc. Fresh broccoli
- 9 Pc. Mini carrots
- 1 tablespoon Margarine
- Coarse salt
- Black pepper from the mill
Instructions
Flesh :
- Season the chops, bread them in egg and breadcrumbs. Fry slowly in hot clarified butter. Approx. 20 min.
Vegetables :
- Clean the broccoli, wash it with the mini carrots, blanch and rinse.
Potato :
- Cut into cubes, wash. Fry in hot margarine and add salt.
Pan vegetables:
- Toss in hot butter or margarine, season.
