Chicken with Tomato and Sage with Homemade Tagliatelle
The perfect chicken with tomato and sage with homemade tagliatelle recipe with a picture and simple step-by-step instructions.
Tagliatelle – dough
- 150 g Pasta flour type 00
- 1 big one Egg
- 1 pinch Salt
- Water
Chicken with tomato and sage
- 400 g Chicken breast cut into bite-sized pieces
- 2 tbsp Strength
- 1 Shallot, finely diced
- 2 Garlic cloves, finely chopped
- 1 tbsp Tomato paste
- 1 Orange, the freshly squeezed juice
- 200 ml Poultry stock
- 200 ml Cream
- 1 handful Fresh sage leaves, cut into fine strips
- 150 g Cherry tomatoes, halved
- Espelette pepper
- Black pepper from the mill
- Salt
- Oil
Pasta dough
- Put the flour in a bowl, add the egg and a pinch of salt and knead with your hands to form an elastic dough. If it is too dry, add some more water. Wrap the dough in cling film and let it rest for at least 30 minutes at room temperature.
- Then roll out the pasta dough as thinly as possible with the pasta machine and cut into tagliatelle with the tagliatelle attachment and park on the pasta dryer.
Chicken with Tomato and Sage & Finish
- Put the chicken pieces in a freezer bag, add the starch and knead the outside to distribute the starch well around the chicken pieces. Heat some oil in a pan and sear the chicken on all sides, then remove and set aside.
- Now put the shallot and the garlic in the pan and sauté briefly and then add the tomato paste and roast for a few minutes. Then deglaze with the orange juice and the poultry stock and reduce to a thick cream over medium heat for about 10 minutes.
- Then add the cream and season with salt, pepper and Espelette pepper and reduce for another 5 minutes, the sauce should already have a slightly creamy consistency. In the meantime, cook the tagliatte in enough salted water until al dente.
- Now lift the tagliatelle out of the water with the spaghetti tongs, drain a little and then add the sauce. If there is some pasta water in the sauce, that is definitely wanted. The water is starchy and binds the sauce, making it easier for the tagliatelle to absorb the sauce.
- Now turn off the stove, add the chicken, tomatoes and sage, stir everything well and let it steep for about 5 minutes and then serve.
