Baked Radishes in Parmesan Basket, Served with Yogurt and Wasabi Cream
The perfect baked radishes in parmesan basket, served with yogurt and wasabi cream recipe with a picture and simple step-by-step instructions.
for the Parmesan baskets
- 100 g Parmesan
for the baked radishes
- 250 g Radish
- 1 tbsp Freshly squeezed lemon juice
- 3 tbsp Flour
- 1 piece Egg, free range
- 3 tbsp Breadcrumbs
- Salt
- Fat to fry out
for the yogurt wasabi cream
- 100 g Natural yoghurt
- 100 g Sour cream
- 2 tsp Wasabi cream
- 1 tbsp Finely chopped parsley
- Salt and pepper
Preparation of the Parmesan baskets
- Preheat the oven to 180 degrees. Finely grate the Parmesan. Draw two circles with a diameter of 14 cm on baking paper, cut them out and place on a baking sheet lined with baking paper. Evenly sprinkle a circle with 50 grams of Parmesan and bake in the hot oven for about 4-6 minutes until golden.
- Carefully lift the Parmesan circle while it is hot with a pallet and place it in a glass with a 6cm diameter, press it down a little so that it has a basket-like shape, then remove the baking paper. Make the second cup in the same way. Let the Parmesan baskets cool completely.
Preparation of the baked radishes
- Clean the radishes, cut off the stems and leaves, wash carefully, pat dry and quarter, the larger radishes sixth, eighth if necessary. Salt the radish pieces, drizzle with lemon juice and let steep for 5-10 minutes. Then dab with kitchen paper.
- Beat the egg in a bowl, season with salt and pepper and whisk. First turn the radish pieces in the flour, pull them through the egg and roll them in breadcrumbs.
- Heat plenty of fat in a pan and fry breaded radishes until golden. Remove and drain on kitchen paper.
Preparation of the yoghurt wasabi cream
- Mix the natural yoghurt with the sour cream. Finely chop the parsley and fold in. Season to taste with wasabi (to taste), salt and pepper.
Serving
- Lift the Parmesan basket out of the glass, fill with baked radishes and place in the serving plate. Divide the yoghurt wasabi cream into bowls and place next to them. Garnish with parsley and lettuce leaves, if you like. Farmers, wholemeal or toast bread tastes good with it.
