Vegetarian Meatballs According to Papa II

The perfect vegetarian meatballs according to papa ii recipe with a picture and simple step-by-step instructions.

(8 – 10 pieces)

  • 300 g Celery and potato mash / here: the rest of yesterday! *)
  • 50 g Beetroot
  • 1 Egg
  • 1 Pickle approx. 50 g
  • 50 g Kohlrabi
  • 50 g Bean sprouts
  • 10 tbsp 8 – 10 tbsp Erdnussöl
  • Breadcrumbs
  1. Dice the beetroot slices, pickles and kohlrabi (peeled). Wash the sprouts and drain them well. Put all ingredients (celery-mashed potatoes, beetroot, egg, pickles and kohlrabi) in a bowl and mix well. Shape meatballs, roll in breadcrumbs and fry in a pan with plenty of peanut oil (8-10 tbsp) on both sides until golden-brown. Be very, very careful when turning the meatballs, otherwise they could fall apart!

Celery and potato mash:

  1. *) Peel 2/3 amount of potato + 1/3 amount of celery, dice, cook in salted water (1 teaspoon) for about 25 minutes, drain and mash with cream or canned milk or cream double and butter. Season with salt and nutmeg (see my recipe: Ladder with celery-mashed potatoes and beetroot)
