Vegetarian Meatballs

The perfect vegetarian meatballs recipe with a picture and simple step-by-step instructions.

Celery and potato mash:

  • 400 g Celery and potato mash (here the rest / See my recipe: http://www./rezept/482976/Korianderbuletten-mit-Sellerie-Kartoffelstampf-und-Erbsen-mit-Moehren.html)
  • 1 kg Potatoes
  • 0,5 Celery (cleaned approx. 500 g)
  • 1 tsp Salt
  • 2 tbsp Butter
  • 50 ml Cooking cream
  • 2 Strong pinches of salt
  • 1 Strong pinch of nutmeg

Vegetarian meatballs:

  • 1 Red onion approx. 50 g
  • 1 Piece of ginger approx. 20 g
  • 1 Red chilli pepper
  • 2 Garlic cloves
  • 3 Fresh coriander stalks
  • 4 tbsp Peanut oil
  • Gherkins

Celery and potato mash:

  1. Peel, wash and roughly dice the potatoes. Peel / clean the celery and roughly dice. Boil the potato and celery cubes in a saucepan with salted water (1 teaspoon) for about 25 minutes, drain, add butter (2 tablespoons) and cooking cream (50 ml) and work through well with the potato masher. Season with salt (2 big pinches) and nutmeg (1 big pinch) / season to taste.

Vegetarian meatballs:

  1. Peel and dice the onion. Peel the ginger and dice very finely. Clean, wash and finely dice the chilli pepper. Wash the coriander, shake dry and finely chop / chop. Put all ingredients (celery and potato mash, diced ginger, diced chili peppers, diced garlic cloves and chopped / cut coriander) in a bowl and mix / mix well. Shape the cutlets (6 pieces) and fry them in a pan with peanut oil on both sides until golden-brown. Be very careful when turning the meatballs so that they don’t disintegrate. Serve vegetarian meatballs with pickles.
