Dessert: Snow Eggs with Vanilla Cream

The perfect dessert: snow eggs with vanilla cream recipe with a picture and simple step-by-step instructions.

Vanilla cream

  • 8 Pc. Egg yolk
  • 250 g Sugar
  • 1 liter Milk
  • 1 Pc. Vanilla pod scraped out

Snow eggs

  • 8 Pc. Protein
  • 2 tablespoon Powdered sugar

aside from that

  • 100 g Sugar
  • Almonds

Vanilla cream

  1. Put the egg yolks with the sugar in a bowl and stir with a whisk until frothy.
  2. Bring the milk with the vanilla pod and pulp to the boil, then remove the pod.
  3. Now carefully beat the vanilla milk into the egg yolk mixture. Then put the cream in a saucepan and stir over low heat with the whisk until the sauce becomes creamy. Then put the cream back in a bowl and let it cool while stirring constantly. (Sore muscles preprogrammed 🙂

Snow eggs

  1. Simmer about 2 liters of salted water in a large saucepan
  2. Beat the egg whites with the powdered sugar until they are very stiff. Shape the egg white into large balls and poach in the salted water for 3-4 minutes.
  3. Briefly toast the almond chips.
  4. Caramelize the sugar in a saucepan.
  5. Arrange the vanilla cream on plates (deep plates are best), place the snow eggs on top, spread some almond slivers on top and drizzle with the caramel sauce.
