Dessert: Snow Eggs with Vanilla Cream

Ingredients
 

Vanilla cream

  • 8 Pc. Egg yolk
  • 250 g Sugar
  • 1 liter Milk
  • 1 Pc. Vanilla pod scraped out

Snow eggs

  • 8 Pc. Egg Whites
  • 2 tablespoon Powdered sugar

aside from that

  • 100 g Sugar
  • Almonds

Instructions
 

Vanilla cream

  • Put the egg yolks with the sugar in a bowl and stir with a whisk until frothy.
  • Bring the milk with the vanilla pod and pulp to the boil, then remove the pod.
  • Now carefully beat the vanilla milk into the egg yolk mixture. Then put the cream in a saucepan and stir over low heat with the whisk until the sauce becomes creamy. Then put the cream back in a bowl and let it cool while stirring constantly. (Sore muscles preprogrammed 🙂

Snow eggs

  • Simmer about 2 liters of salted water in a large saucepan
  • Beat the egg whites with the powdered sugar until they are very stiff. Shape the egg white into large balls and poach in the salted water for 3-4 minutes.
  • Briefly toast the almond chips.
  • Caramelize the sugar in a saucepan.
  • Arrange the vanilla cream on plates (deep plates are best), place the snow eggs on top, spread some almond slivers on top and drizzle with the caramel sauce.
