Ingredients
Vanilla cream
- 8 Pc. Egg yolk
- 250 g Sugar
- 1 liter Milk
- 1 Pc. Vanilla pod scraped out
Snow eggs
- 8 Pc. Egg Whites
- 2 tablespoon Powdered sugar
aside from that
- 100 g Sugar
- Almonds
Instructions
Vanilla cream
- Put the egg yolks with the sugar in a bowl and stir with a whisk until frothy.
- Bring the milk with the vanilla pod and pulp to the boil, then remove the pod.
- Now carefully beat the vanilla milk into the egg yolk mixture. Then put the cream in a saucepan and stir over low heat with the whisk until the sauce becomes creamy. Then put the cream back in a bowl and let it cool while stirring constantly. (Sore muscles preprogrammed 🙂
Snow eggs
- Simmer about 2 liters of salted water in a large saucepan
- Beat the egg whites with the powdered sugar until they are very stiff. Shape the egg white into large balls and poach in the salted water for 3-4 minutes.
- Briefly toast the almond chips.
- Caramelize the sugar in a saucepan.
- Arrange the vanilla cream on plates (deep plates are best), place the snow eggs on top, spread some almond slivers on top and drizzle with the caramel sauce.
