Eggs with Broccoli in Bacon and Mustard Sauce

  • 500 g Broccoli
  • Salt pepper
  • 40 g Smoked bacon, dice
  • 2 tbsp Butter
  • 1 tbsp Flour
  • 200 ml Whipped cream
  • 1 tsp Vegetable broth powder
  • 75 g Mustard
  • 8 Eggs
  • Some parsley
  1. • Cut the broccoli into florets. Cook in salted water for about 5 minutes. Drain, collect the cooking water. Leave the bacon in a saucepan, remove it. Pour in butter, heat. Sweat the flour in it. Deglaze with 400 ml of vegetable water and cream, bring to the boil. Stir in the broth and mustard. simmer for about 3 minutes. To taste. Add bacon. Boil eggs for about 7 minutes. Chop parsley except for a little. Drain, rinse, peel and halve eggs. Warm the broccoli and eggs in the sauce. Sprinkle with parsley and garnish.
