Leek Buffer
The perfect leek buffer recipe with a picture and simple step-by-step instructions.
- 200 g Flour
- 4 Eggs
- 250 ml Milk (1.5%)
- 1 tsp Salt
- 50 g Diced ham mildly smoked (here: From ABRAHAM)
- 300 g Leeks (1 stick)
- 1 Cup of oil or peanut oil or butterfat etc.
- Tatarska omàcka or garlic sauce
- Clean the leek, wash it well, first cut into thin strips and then into small cubes. Mix all ingredients (flour, eggs, milk, salt, diced ham and leek) one after the other in a bowl and let stand for approx. 20 – 30 minutes. Heat the oil in a pan, fill in 4 small ladles, fry the buffers on both sides until golden-brown and degrease on kitchen paper. Repeat the roasting process 4 – 5 times. The batter makes about 16-18 buffers. Serve the finished pancakes with Tatarska Omàcka (Czech specialty) or with garlic sauce.
