Apple – Cheese – Cake

The perfect apple – cheese – cake recipe with a picture and simple step-by-step instructions.

  • For the crumble batter:
  • 300 g Flour
  • 180 g Sugar white
  • 2 packet Vanilla sugar
  • 1 pinch Salt
  • 200 g Cold butter
  • 100 g Chopped hazelnuts
  • For covering:
  • 500 g Lowfat quark
  • 500 g Mascarpone
  • 5 Free range eggs
  • 225 g Sugar white
  • 2 packet Vanilla sugar
  • 40 g Semolina
  • 50 g Flour
  • 500 g Tart apples
  1. Make a crumble batter out of butter, flour, sugar, salt, vanilla sugar and the hazelnuts. Spread about 2/3 of the crumble dough on the bottom of a prepared springform pan and chill with the rest of the crumble dough for about 30 minutes.
  2. Mix the eggs with the sugar and vanilla sugar in a mixing bowl until creamy. Stir in the quark and mascarpone. Add the flour and semolina and stir in briefly.
  3. Peel the apples, remove the core and cut into small cubes.
  4. Spread the apple cubes on the dough base. Add the quark mixture and smooth it out. Now distribute the remaining crumble on top.
  5. Place the cake in the oven preheated to 175 degrees (convection) and bake for approx. 60 – 65 minutes. After the baking time, take it out of the oven, let it cool down for 15 minutes, loosen the springform pan and let it cool down in the pan. Before serving, you can sprinkle the cake with powdered sugar.
