Omelette with King Oyster Mushrooms and Mountain Cheese (pancakes)

- 6 piece Free range eggs
- 150 ml Milk
- 150 g Flour
- Salt
- Gourmet pepper from my KB

- 4 Branches Freshly chopped thyme
- 120 gr Mountain cheese
- 150 g King oyster mushrooms
- 15 piece Cherry tomatoes
- Preheat the oven to 180 degrees
- Mix eggs with milk and flour and season with salt and pepper. Let sources
- Wash the thyme, shake dry, pluck the leaves from the stems, chop and mix with the batter.
- Wash tomatoes, clean, clean and halve the mushrooms – smaller ones can be used whole Grate the mountain cheese and mix into the dough except for a residue (to sprinkle over it)
- Lightly fry the mushrooms in butter
- Heat the oil in an ovenproof pan (diameter approx 21cm) and distribute the dough evenly.
- Fry 3-4 minutes over medium heat. Spread the mushrooms and tomatoes evenly in the pan and sprinkle the remaining mountain cheese on top.
- Now let it set in the preheated oven at 180 degrees for about 8-10 minutes
- Go with a lamb’s lettuce with croutons or fried champion
