Omelette with King Oyster Mushrooms and Mountain Cheese (pancakes)

Ingredients
 

  • 6 Free range eggs
  • 150 ml Milk
  • 150 g Flour
  • Salt
  • Gourmet pepper
  • -
  • 4 sprigs Freshly chopped thyme
  • 120 g Mountain cheese
  • 150 g King oyster mushrooms
  • 15 Cherry tomatoes

Instructions
 

  • Preheat the oven to 180 degrees
  • Mix eggs with milk and flour and season with salt and pepper. Let sources
  • Wash the thyme, shake dry, pluck the leaves from the stems, chop and mix with the batter.
  • Wash tomatoes, clean, clean and halve the mushrooms - smaller ones can be used whole Grate the mountain cheese and mix into the dough except for a residue (to sprinkle over it)
  • Lightly fry the mushrooms in butter
  • Heat the oil in an ovenproof pan (diameter approx 21cm) and distribute the dough evenly.
  • Fry 3-4 minutes over medium heat. Spread the mushrooms and tomatoes evenly in the pan and sprinkle the remaining mountain cheese on top.
  • Now let it set in the preheated oven at 180 degrees for about 8-10 minutes
  • Go with a lamb's lettuce with croutons or fried champion
