Stuffed Zucchini My Way 2.0

  • 1 size Zucchini
  • 3 Mettenden
  • 1 Onion
  • 3 Garlic cloves
  • 1 Can Chunky tomatoes
  • 5 tablespoon Pearl barley
  • Oil
  • Salt, pepper, thyme, rosemary, fresh basil
  • 200 g Feta
  1. Wash, clean, halve and hollow out the zucchini. Pick up the inside.
  2. Cut the beef ends into slices. Peel the onion and cut into cubes. Peel the garlic cloves and cut into slices. Cut the feta into slices. Cut the fresh basil into strips.
  3. Fry the onion and garlic in a little oil until lightly. Add the sausage slices and fry them. Add the inside of the zucchini and the tomatoes with a can of water. Season with salt, pepper, thyme and rosemary and add the pearl barley. Let everything simmer gently for about 25 minutes.
  4. Then let it cool down a bit and fill the zucchini with it. Place the feta slices on top and add the rest of the ragout to the zucchini in the baking dish. Add a little more water and bake everything at 180 ° top / bottom heat for about 1 hour.
