Dessert: Cherry – Mango Quark Dessert with Chocolate Cream

the cherry layer

  • 250 g Cherries fresh and pitted
  • 2 tablespoon Sugar
  • 1 tablespoon Potato flour – no moon amine, otherwise it will be cloudy
  • Some water

the mango curd layer

  • 250 g Quark
  • 3 tablespoon Mango and orange puree *

the chocolate cream

  • 100 ml Cream
  • 100 g Dark couverture

the cherry layer

  1. Mix the pitted cherries with the sugar, puree and bring to the boil. Emulsify the potato flour in a little cold water and add to the cherries. Bring to the boil again until it has thickened a little. Let cool for half an hour and then distribute on dessert glasses.
