Omis Broad Bean Stew from Transylvania

- 960 g Broad beans, drained weight
- 400 g Smoked ham
- 6 Pc. Kat ham small
- 2 Pc. Onion
- 4 Pc. Clove of garlic
- 1 Pc. Chili
- 1 tbsp Tomato paste
- 2 tbsp Flour
- Paprika
- Salt
- Pepper from the grinder
- Parsely
- 200 ml Cream 10% fat
- 4 sheet Bay leaf
- Peppercorns
- Oil for frying
- First cook the ham with the bay leaves, an onion and a few peppercorns until soft.
- Rinse the beans well in a sieve.
- Then prepare everything well, cut to size:
- Chop the onion, garlic and chilli into small pieces.
- Cut the pork ham into small pieces.
- Chop the parsley into small pieces.
- Cut the cooked ham into small pieces.
- Now you can start!
- Briefly fry the onions, chilli, cured ham and garlic, then put them in paper.
- Deglaze with about 700 ml. Water. Add a little salt, please note that the ham is already heavily salted. Season with a little pepper.
- Add the prepared beans and the cut pieces of ham.
- Cover and simmer for approx. 30 minutes.
- Make a stoving out of the flour with a little oil. Paprika, add the tomato paste and deglaze with about 200 ml. Water. Stir well.
- Add the seared beans to the beans, continue stirring over a low heat until the sauce is well thickened.
- Add parsley and cream.
