Omis Broad Bean Stew from Transylvania

  • 960 g Broad beans, drained weight
  • 400 g Smoked ham
  • 6 Pc. Kat ham small
  • 2 Pc. Onion
  • 4 Pc. Clove of garlic
  • 1 Pc. Chili
  • 1 tbsp Tomato paste
  • 2 tbsp Flour
  • Paprika
  • Salt
  • Pepper from the grinder
  • Parsely
  • 200 ml Cream 10% fat
  • 4 sheet Bay leaf
  • Peppercorns
  • Oil for frying
  1. First cook the ham with the bay leaves, an onion and a few peppercorns until soft.
  2. Rinse the beans well in a sieve.
  3. Then prepare everything well, cut to size:
  4. Chop the onion, garlic and chilli into small pieces.
  5. Cut the pork ham into small pieces.
  6. Chop the parsley into small pieces.
  7. Cut the cooked ham into small pieces.
  8. Now you can start!
  9. Briefly fry the onions, chilli, cured ham and garlic, then put them in paper.
  10. Deglaze with about 700 ml. Water. Add a little salt, please note that the ham is already heavily salted. Season with a little pepper.
  11. Add the prepared beans and the cut pieces of ham.
  12. Cover and simmer for approx. 30 minutes.
  13. Make a stoving out of the flour with a little oil. Paprika, add the tomato paste and deglaze with about 200 ml. Water. Stir well.
  14. Add the seared beans to the beans, continue stirring over a low heat until the sauce is well thickened.
  15. Add parsley and cream.
