The perfect pancakes, mediterranean recipe with a picture and simple step-by-step instructions.

Pancakes

  • 100 g Flour
  • 2 Pc. Eggs
  • 150 ml Natural carbonated mineral water
  • A pinch of sAlt

For covering:

  • A hAndful of KAt hAm
  • A hAndful of iceberg lettuce
  • A hAndful of cherry tomAtoes
  • 50 gr Crumbled feta
  • 100 ml Creme fraiche Cheese
  • 2 Pc. Spring onions fresh
  • Basil
  • 1 Pc. Garlic clove chopped
  • Fry the oil with the pancakes
  • Olive oil for frying for the topping
  1. Mix the flour, eggs and mineral water into a lump-free dough. Season with a little salt.
  2. Heat the oil and fry the pancakes according to personal taste, sometimes thinner or thicker.
  3. Heat the olive oil and immediately turn the stove to medium heat, please prepare everything carefully. It is worth it!
  4. First turn the diced ham and spring onions briefly in the olive oil. Do not fry, so all the ingredients stay snappy, refreshingly tasty and the ingredients are not wasted either!
  5. Add the tomatoes, stir.
  6. Crumble the feta cheese over it, add the garlic, stir.
  7. Mix in the chopped iceberg lettuce.
  8. My stove was already off at this point, so that the salad would stay crispy, I only prepared everything else with residual heat.
  9. “Tear” the basil into the cream. I don’t cut basil as much as possible because it loses too much juice and taste. Stir well and mix with the vegetables. I didn’t take any more spices, the ham gave everything :-))
  10. Cover pancakes and … enjoy!
  11. Uuuund … I have leftover again … pancakes … my husband will eat them with cinnamon and sugar. I know that. Even if they are already cold …
