Pasta with Zucchini and Olives
The perfect pasta with zucchini and olives recipe with a picture and simple step-by-step instructions.
- 250 g Pasta
- 1 Zucchini
- 1 Onions
- 1 Handful Black pitted olives
- 1 Handful Olives green
- Olive oil
- Vegetable broth
- Salt
- Pepper
- Rosemary
- Parmesan cheese
- Cook the pasta in vegetable stock until aldente.
- Peel the onions, dice them finely and sauté them in olive oil until they are translucent, wash the zucchini, cut into strips, add to the onions and sauté, add 100 ml. Vegetable stock and simmer gently for about 10 minutes.
- Halve the olives, add to the zucchini-onion mixture, season everything with salt, pepper and rosemary and bring to the boil again.
- Arrange the noodles on plates, pour the vegetables over them and serve.
- Of course, no Parmesan cheese should be missing here either.
