Spicy Baking: Pizza Tarts with Strudel Dough

The perfect spicy baking: pizza tarts with strudel dough recipe with a picture and simple step-by-step instructions.

The dough

  • 250 g Wheat flour type 550
  • 2 tablespoon Sunflower oil
  • 1 pinch Salt
  • 1 pinch Water

The filling

  • 8 piece Mushrooms brown
  • 150 g Mini mozzarella balls
  • 2 piece Tomatoes
  • 1 piece Fresh onion
  • 50 g Black Forest ham
  • 2 piece Free range eggs
  • 0,5 teaspoon Black pepper from the mill
  • 0,5 teaspoon Salt
  • 1 teaspoon Red chilli flakes
  • 2 teaspoon Dried basil
  • 1 teaspoon Oregano

The “on top”

  • 2 tablespoon Grated Parmesan
  • 3 tablespoon Cream 10% fat
  • 125 g Mini mozzarella balls

the dough

  1. Mix the flour with oil and salt in a bowl and add water drop by drop, kneading constantly, until a supple, smooth dough is formed.
  2. Let the dough rest under a hot bowl – and this is really important – for half an hour.
  3. Grease and crumble a muffin pan. Roll out the dough very thinly on a floured surface and cut out circles with a dessert ring (10 cm diameter), which are then pressed into the recesses of the muffin tin.

the filling

  1. Peel the onion. Dice the onion and ham and fry in a pan with a tablespoon of oil.
  2. Scald tomatoes with hot water, leave to stand for two minutes, then peel off the skin, remove the stems and also dice.
  3. Quarter the mozzarella balls (half a pack).
  4. Clean the mushrooms and cut them into cubes as well.
  5. Crush the pepper, salt, chilli flakes, dried basil and oregano in a mortar.
  6. Mix the onion and ham mixture, tomatoes, mushrooms and mozzarella cubes with the spices and the two eggs. Fill the strudel dough bowl with it.
  7. Roll out the remaining strudel dough again and cut out 12 small circles. Place these on top of the filling.
  8. Bake the tartlets at 190 degrees lower / upper heat in the preheated oven for about 15 minutes.

that on top

  1. Cut the mozzarella balls into thin slices (24 pieces) and mix the cheese with the cream.
  2. After 15 minutes of baking time, spread 2 slices of mozzarella and a teaspoon of cheese and cream mixture on the tartlet.
  3. Bake again in the oven for 20 minutes.
