Fruity Parsnip Soup
The perfect fruity parsnip soup recipe with a picture and simple step-by-step instructions.
- 400 g Parsnips
- 2 Pc. Onions
- 2 Pc. Apples sweet
- 1 tbsp Butter
- 2 tbsp Lemon juice
- 1,5 liter Vegetable broth
- Cut apples into fine wedges, cut onions into rings. Peel the parsnips, cut off the point (is woody), cut into slices.
- Steam the vegetables in the butter. Add the lemon juice.
- Pour in the stock and bring to the boil. Reduce the heat, cover and simmer for approx. 15 minutes.
- Goes well with: Garlic bread Tip: Replace parsnips with celery
