Fruity Parsnip Soup

The perfect fruity parsnip soup recipe with a picture and simple step-by-step instructions.

  • 400 g Parsnips
  • 2 Pc. Onions
  • 2 Pc. Apples sweet
  • 1 tbsp Butter
  • 2 tbsp Lemon juice
  • 1,5 liter Vegetable broth
  1. Cut apples into fine wedges, cut onions into rings. Peel the parsnips, cut off the point (is woody), cut into slices.
  1. Steam the vegetables in the butter. Add the lemon juice.
  1. Pour in the stock and bring to the boil. Reduce the heat, cover and simmer for approx. 15 minutes.
  1. Goes well with: Garlic bread Tip: Replace parsnips with celery
