Fruity Parsnip Soup

Ingredients
 

  • 400 g Parsnips
  • 2 Onions
  • 2 Apples sweet
  • 1 tbsp Butter
  • 2 tbsp Lemon juice
  • 1,5 L Vegetable broth

Instructions
 

  • Cut apples into fine wedges, cut onions into rings. Peel the parsnips, cut off the point (is woody), cut into slices.
  • Steam the vegetables in the butter. Add the lemon juice.
  • Pour in the stock and bring to the boil. Reduce the heat, cover and simmer for approx. 15 minutes.
  • Goes well with: Garlic bread Tip: Replace parsnips with celery
