Cow Stain Cake
The perfect cow stain cake recipe with a picture and simple step-by-step instructions.
- 200 g Dark chocolate couverture
- 150 g Butter
- 150 g Sugar
- 4 Eggs
- 50 g Flour
- 3 sheet Gelatin
- 250 ml Milk
- 1 packet Vanilla sugar
- 2 Protein
- 2 Salt
- 80 g Sugar
- 100 g Cream
- 100 g Dark chocolate couverture
- For the chocolate dough, melt the couverture and butter with 100 g sugar in a bowl over a hot water bath. Preheat the oven to 160 °. Line the springform pan (26 cm) with baking paper.
- Separate the four eggs. Mix the egg yolks with the flour into the liquid chocolate mixture. Beat the egg whites until stiff, pouring in the remaining sugar. Carefully fold the egg whites under the chocolate mass. Spread the dough evenly in the baking sheet and bake it in the hot oven (fan oven 140 °) for about half an hour. to bake. Take out of the oven and let the chocolate base cool in the baking sheet.
- In the meantime, soak the gelatine in cold water for about 5 minutes for the milk mousse. Bring almost 100 ml of milk with vanilla sugar to the boil. Squeeze out the gelatine and dissolve it in the hot milk. Stir in the rest of the milk. Pour everything into a large bowl and let it gel slightly in the refrigerator.
- Beat the egg whites with a pinch of salt until they are very stiff, drizzling in the sugar. Whip the cream until it is semi-stiff and fold it into the slightly gelled milk, then carefully fold in the egg whites. Spread the milk mousse on the chocolate base in the baking sheet, smooth it out and put it in a cool place for approx. 2 hours.
- For the cow stains, melt the dark chocolate couverture and place in a piping bag. Spray the pattern onto the milk mousse and let it dry.
- Tip 6: To serve, cut the cake into slices of the same size with a knife that is repeatedly dipped in hot water.
