South Tyrolean Barley Soup

The perfect south tyrolean barley soup recipe with a picture and simple step-by-step instructions.

  • 250 g Barley
  • 1 Onion
  • 150 g Bacon cubes
  • 250 g Smoked
  • 3 Carrots
  • 0,5 Celery bulb
  • 1 Leek
  • 4 Potatoes
  • 3 liter Beef broth
  • Salt pepper
  1. Soak the barley in cold water overnight. Peel the vegetables and cut into cubes. Halve the leek and cut into strips.
  2. Finely dice the onion and roast in a little oil with the bacon and the diced smoked meat in a large saucepan.
  3. Add the drained barley, pour the beef stock and let everything simmer for about 1 hour.
  4. Then add the vegetables and simmer for another 20-30 minutes. Season to taste with salt and pepper.
