South Tyrolean Barley Soup
The perfect south tyrolean barley soup recipe with a picture and simple step-by-step instructions.
- 250 g Barley
- 1 Onion
- 150 g Bacon cubes
- 250 g Smoked
- 3 Carrots
- 0,5 Celery bulb
- 1 Leek
- 4 Potatoes
- 3 liter Beef broth
- Salt pepper
- Soak the barley in cold water overnight. Peel the vegetables and cut into cubes. Halve the leek and cut into strips.
- Finely dice the onion and roast in a little oil with the bacon and the diced smoked meat in a large saucepan.
- Add the drained barley, pour the beef stock and let everything simmer for about 1 hour.
- Then add the vegetables and simmer for another 20-30 minutes. Season to taste with salt and pepper.
