Pearl Barley Soup with Cooked Sausage

Ingredients
 

  • 600 g Kasseler
  • 1 Onion
  • 3 L Vegetable broth
  • 1 bunch Soup vegetables
  • 500 g Barley pearl barley medium
  • 1,5 kg Potatoes
  • Cooked sausage, Viennese as desired

Instructions
 

  • Cook the smoked pork with the onion in the vegetable stock. Take the meat out of the broth and, if necessary, pour it through a sieve once, so I always avoid small splinter bones.
  • I always boil the pearl barley in salted water, as they always give off a lot of starch and the soup otherwise becomes milky.
  • Soup vegetables, wash, clean and cut into small pieces. Peel and chop the potatoes. Also dice the meat.
  • Bring the stock to a boil, add the soup vegetables and bring to the boil. Add the potatoes and the boiled pearl barley to the broth and bring to the boil. Possibly Season again to taste and serve with boiled sausage or wiener.
