Refreshing Barley Soup with Crackers

Ingredients
 

  • 200 g Leek
  • 200 g Celery
  • 2 Carrots
  • 2 Lemongrass sticks
  • 100 g Barley
  • 1 tbsp Butter
  • 1 L Meat bouillon
  • 8 Knackerli or Wienerli
  • Salt
  • Pepper

Instructions
 

  • Wash vegetables. Cut the leek into strips, celery and carrots into cubes. Crush the lemongrass gel a little.
  • Steam everything in butter in a large pan for approx. 3 minutes.
  • Add the barley and sauté briefly.
  • Add the meat stock and simmer covered for about 1 hour over low heat.
  • Remove lemongrass gel and season. Add the Knackerli whole or cut into rings. Bring to the boil and serve hot.
  • Tip 6: Refine with 1dl cream.
