Refreshing Barley Soup with Crackers
The perfect refreshing barley soup with crackers recipe with a picture and simple step-by-step instructions.
- 200 g Leek
- 200 g Celery
- 2 Pc. Carrots
- 2 Pc. Lemongrass sticks
- 100 g Barley
- 1 tbsp Butter
- 1 liter Meat bouillon
- 8 Pc. Knackerli or Wienerli
- Salt
- Pepper
- Wash vegetables. Cut the leek into strips, celery and carrots into cubes. Crush the lemongrass gel a little.
- Steam everything in butter in a large pan for approx. 3 minutes.
- Add the barley and sauté briefly.
- Add the meat stock and simmer covered for about 1 hour over low heat.
- Remove lemongrass gel and season. Add the Knackerli whole or cut into rings. Bring to the boil and serve hot.
- Tip 6: Refine with 1dl cream.
