Refreshing Barley Soup with Crackers

The perfect refreshing barley soup with crackers recipe with a picture and simple step-by-step instructions.

  • 200 g Leek
  • 200 g Celery
  • 2 Pc. Carrots
  • 2 Pc. Lemongrass sticks
  • 100 g Barley
  • 1 tbsp Butter
  • 1 liter Meat bouillon
  • 8 Pc. Knackerli or Wienerli
  • Salt
  • Pepper
  1. Wash vegetables. Cut the leek into strips, celery and carrots into cubes. Crush the lemongrass gel a little.
  2. Steam everything in butter in a large pan for approx. 3 minutes.
  3. Add the barley and sauté briefly.
  4. Add the meat stock and simmer covered for about 1 hour over low heat.
  5. Remove lemongrass gel and season. Add the Knackerli whole or cut into rings. Bring to the boil and serve hot.
  6. Tip 6: Refine with 1dl cream.
