Dessert Poached Figs
The perfect dessert poached figs recipe with a picture and simple step-by-step instructions.
- 4 piece Figs fresh
For the brew:
- 4 tbsp Sugar
- 200 ml White wine
- 4 tbsp Honey
- 1 piece Fresh ginger approx. 3 cm
- 1 piece Cinnamon stick
For the cream
- 250 g Mascarpone
- 250 g Natural yoghurt
- 1 pinch Pepper from the grinder
Preparatory work
- Wash, pat dry and peel the figs. Cut the ginger into small slices.
Preparation of the brew
- Caramelize the sugar in a saucepan until it is light golden brown. Deglaze with white wine. The caramel sugar becomes very hard and then dissolves again. Add the honey, a cinnamon stick and the ginger slices.
- Let the stock boil over medium heat for 2 minutes. Reduce the heat, add the peeled, whole figs and let everything simmer for 5 minutes, turning the figs 2-3 times.
- Remove the figs from the stock and reduce the wine stock to a syrupy level over high heat and allow to cool. Remove the cinnamon stick. Take out the ginger slices and cut into small pieces.
Preparation of the cream
- Mix the mascarpone with natural yoghurt, pieces of ginger, 1-2 tbsp wine syrup (to taste) and a pinch of ground pepper until creamy.
Serving
- Spread the cream on dessert plates or bowls and place a fig on each one. Serve sprinkled with pepper.
