It doesn’t matter whether you eat vegan, avoid eggs for health reasons – or simply don’t have any eggs at home: You don’t have to do without breaded schnitzel, crispy cutlet, or fish in breading. We show you ways to bread without eggs. With our tips, you can give classic or vegetarian schnitzel, such as cauliflower schnitzel, a coating that is just as crispy as vegetables or fried fish.
Why do we bread food?
Breading prevents liquid from leaking out of the food during the cooking process. In this way, the aromas that are responsible for the specific taste of a dish are preserved. For these reasons, foods are usually breaded. You can also bread meat, fish, or vegetables before deep-frying. This ensures that the food is not directly exposed to high heat during the frying process. Read here again how to bread properly and what the order is.
By the way: The egg serves as a binding agent in the breading and ensures that the crispy crust does not fall off. If you want to bread schnitzel or chops without an egg, you must use another viscous substance that allows the breading to stick to the fried food. For this, you need to make a creamy liquid. We have the recipe for the right mix of ingredients, as well as vegan and non-vegan alternatives.
Meat and fish breading without egg
And this is how it works: Mix one tablespoon of flour with three tablespoons of water, a pinch of salt, and – depending on your taste – spices such as paprika, pepper, or chili to form a creamy liquid. In this you then turn schnitzel, chops, fish, or whatever you want to bread. Then roll the food in breadcrumbs on a plate. If you like the breading thicker, turn everything a second or third time in the flour and water mixture and the breadcrumbs. Vegan breading without eggs is that easy! If “vegan” is not your aspiration or goal, you can just as easily use dairy products such as yogurt, cream, or condensed milk. Simply season with a little salt, first coat the fried food in flour, then in the liquid, then roll in the breadcrumbs – and off to the pan!
