Freezer burn on bread – how to recognize it
If you take frozen bread out of the freezer, you should take a closer look at it before it finally lands on the table.
- If you discover light spots anywhere on the bread crust and/or on the bread slices, it may already be a freezer burn. In most cases, however, the areas of the bread affected by the freezer belt are located more in the middle. In addition, the affected areas of the bread are also significantly harder than the rest of the bread.
- If the stains are greyish, it’s probably freezer burn. If the color of the spots is white, you need to be more careful, because then it could also be mold spores in the bread.
- In contrast to freezer burn, mold is generally a health hazard and the bread should therefore be completely disposed of. In the case of mold growth, it does not make sense to only cut out the area that is affected, since in most cases the mold spores have already penetrated further into the bread.
- Unlike mold, freezer burn on bread is harmless. However, freezer burn in no way contributes to an improvement in taste. As a rule, the aroma and taste have suffered significantly and you should therefore avoid freezer burn on the bread as much as possible.
- In the case of a freezer burn, the food dries out in a flash. As a result, the bread quickly loses a lot of water. Due to the spontaneous drying out, various dry, unpalatable spots appear in the bread.
- In short: If your bread has suffered freezer burn due to improper storage in the freezer, eating it is not harmful to your health, but the freezer burn is not taste-enhancing either. If you’re even a tad unsure whether the stains on or in the bread are from freezer burn or mold, throw the food away.
Avoid freezer burn – you can do it with a few simple tricks
For example, if food is spoiled by mold, it is imperative to dispose of the food. However, it is not that difficult to successfully prevent adversities such as freezer burn. The measures not only apply to bread but can also be applied to almost all foods that are frozen.
- Basically, the cold chain should never be interrupted for frozen food. Buy frozen bread, and take a cooler with you.
- If you freeze bread, be sure to wrap the loaf airtight before it goes into the freezer. When it comes to food, it usually makes sense to portion it before freezing. For example, if you have baked bread yourself, it is certainly not the worst idea to divide it into appropriately sized pieces before freezing.
- Of course, you also have to pack the individual pieces of bread separately. On the market, you will find special silicone bags that are relatively stable and that you can use more often.
- If you take the bread out of the freezer, the risk of freezer burn is not over yet. Frozen food must always be thawed slowly. It is, therefore, best to take the bread out of the freezer in the evening, place it on a wire rack and let it slowly defrost overnight at room temperature. In the morning you have fresh bread on the table.
- If you are in a hurry, let the bread defrost in the oven at a temperature of around 50°C with convection air.
