Recipes with walnuts: bruschetta as a starter

For the bruschetta recipe, you will need 12 slices of ciabatta bread, 50 grams of walnut kernels, 100 grams of young pecorino, two pears, and four teaspoons of liquid honey, and pepper.

  1. Start by preheating the oven to 200 degrees and toast the bread slices in it for a few minutes until they are golden brown in color.
  2. Now roast the walnut kernels in a coated pan and make sure that the kernels do not get too dark. After roasting, you should let the walnuts cool down and then chop them into small pieces.
  3. Now cut the pecorino cheese into thin slices and peel and core the pears and cut them into thin slices as well. Now cover each slice of bread with some cheese and two to three pear slices.
  4. Put the bruschetta sandwiches back in the oven and let the cheese melt a little under the grill function. As soon as the cheese has melted, you can take the loaves out of the oven and sprinkle with the walnuts, drizzle with a little honey, and season with pepper. Serve the bruschetta warm.

Main course with walnuts: Spaghetti with walnut sauce

For delicious spaghetti with walnut sauce, you need 200 grams of walnuts, a bunch of basil, two crushed cloves of garlic, an onion, 500 grams of spaghetti, and 200 milliliters of cream, and salt and pepper.

  1. Start by cooking the noodles in salted water according to package directions until al dente. After cooking, rinse them in cold water.
  2. Now peel the onion and chop it into small pieces. Also finely chop the basil leaves, the walnuts can be roughly chopped. While slicing you can already heat some oil in the pan.
  3. Let the onion fry in the pan for three minutes before you roast the nuts for a minute. Now pour the whole thing on with the cream and season the sauce with basil, garlic, salt, and pepper.
  4. Finally, mix the pasta into the sauce and leave it to stand for a further two minutes before serving.

Apple and walnut dessert

For a layered dessert with apples and walnuts, you need three apples, 100 grams of sugar, 40 grams of walnuts, four tablespoons of honey, 75 milliliters of chardonnay or apple juice (if you use apple juice, you can omit the honey), 250 grams of low-fat quark and 250 grams of mascarpone.

  1. First, wash the apples, remove the core, and cut them into cubes. The walnuts can be roughly chopped.
  2. Now melt 50 grams of sugar in a saucepan. When the sugar begins to caramelize, you can add the diced apples, the walnuts, and the apple juice, or the Chardonnay and honey. Mix everything well and let the mixture caramelize briefly.
  3. Now mix the remaining sugar with the quark and mascarpone and start by dividing a third of the cream into four glasses. Then put half of the apples and walnuts on the cream and then another third of the cream on the glasses. Repeat layering until jars are completely filled and there is a layer of cream on top.
  4. Before serving, you can garnish the dessert with some mint leaves and walnut kernels.
