Fruity layered dessert in a glass: raspberry and poppy seed dream
Serve the raspberry poppy seed cream as a layered dessert in a glass. It is best to fill them in small mason jars or special dessert glasses. The best thing about this recipe is that you don’t have to chill the dessert first, you can enjoy it right away.
- Ingredients for 4 servings: 700 g frozen raspberries, 500 g mascarpone, 150 g natural yogurt (3.5% fat), 3 tbsp sugar, 1 tbsp ground poppy seeds, 1 pack of vanilla sugar, half a lemon
- Preparation: Thaw the frozen raspberries.
- Using a spoon or fork, mash and mix 500g of raspberries, sugar, and the juice of half a lemon until just a few pieces remain.
- Briefly stir in the remaining 200 g raspberries. The berries should remain as whole as possible.
- In a mixing bowl, mix together the mascarpone and plain yogurt. Add poppy seeds and vanilla sugar. Mix the ingredients to an even mass.
- Fill 4 tall dessert glasses alternately with mascarpone and raspberries. It looks particularly nice when the raspberries form the bottom and top layers.
For chocolate fans: avocado cocoa cream
Make chocolate lovers happy with this recipe. Prepare the cream in a blender or with an immersion blender in just a few minutes. Then chill the dessert for 30 minutes before serving.
- Ingredients for 4 servings: 2 ripe avocados, 250g whipping cream, 100g liquid honey, 50g baking cocoa, 4 tsp chocolate chips
- Preparation: Put the flesh of the two avocados in the blender together with 150 g of whipped cream, honey, and cocoa powder. Mix all ingredients to a smooth mass.
- Fill the avocado chocolate cream into 4 dessert glasses. Place the glasses in the fridge for 30 minutes – if you have more time, I would prefer longer.
- Whip 100 g of cream until stiff and spread it over the four glasses as a topping. Finally, garnish the dessert with chocolate chips.
Cherry vanilla cream with biscuits
If you want to combine pudding and biscuits in one dessert, try this simple recipe:
- Ingredients for 4 servings: ½ glass of sour cherries, 15 g sugar, ½ pack of vanilla pudding powder for cooking, the pulp of ¼ vanilla bean, 250 g of vanilla-flavored yoghurt, 70 g of chocolate biscuits with a vanilla cream filling (e.g. Oreos)
- Preparation: Pour the contents of the cherry glass into a sieve. Catch the cherry juice in a bowl. For the recipe, you only need half the amount of cherries and juice.
- Pour half, about 125ml, of the cherry juice into a saucepan. Boil the juice with the sugar on the stove.
- In a bowl, mix the other half of the cherry juice with half a packet of vanilla custard powder.
- Then pour the mixture into the pot and mix all the ingredients together well. Simmer the cherry pudding over medium-high heat for 1 minute, stirring constantly.
- Remove the pan from the heat and fold in the remaining cherries. Let the pudding cool down.
- Mix yogurt and vanilla pulp in a bowl.
- Crumble the biscuits into small biscuit pieces.
- Layer the cooled cherry pudding, yogurt, and biscuits into 4 dessert glasses. Finally, garnish the dessert with a few remaining biscuit pieces.
