Why are carrots so healthy?
Whether you call it “carrot,” “carrot,” or “turnip,” the multitude of nutrients is the main reason why the native root vegetable is so healthy.
- Carrots contain many vitamins and minerals, such as beta-carotene, which is converted into vitamin A in the human body, and biotin, which is particularly important for fat and protein metabolism. Vitamin A has a positive effect on eye health. Above all, it improves the ability to see well in the dark.
- Due to their antioxidant effect, the carotenoids in the carrot improve the human immune system and reduce the risk of cardiovascular diseases and cancer.
- Because of the positive effects on the gastrointestinal tract, carrot pulp is particularly suitable as food for babies. The contained dietary fiber pectin causes the intestinal-friendly bacteria to multiply. This ensures a healthy intestinal flora and reduces the risk of disease.
Recipe: Carrot Pasta with Tomato Sauce
In addition to the classic preparation in a stew or in combination with peas and potatoes, there are many other ways to prepare carrots tasty.
- For carrot noodles, you need three carrots, two cloves of garlic, an onion, half a can of diced tomatoes, a dash of cream, a tablespoon of coconut ghee and tomato paste, and the right spices.
- Use a vegetable peeler to peel the carrots into noodles. The noodles are then cooked in a pot with a steamer insert until al dente.
- First, the onions are fried in the coconut ghee, then the garlic. Then you can deglaze the garlic and onions with tomatoes and cream.
- Season the sauce with seasonings that go well with pasta, like oregano and basil, and salt and pepper. If desired, the pasta can be served with Parmesan.
