Hand cheese tartar – Hessian tapas

Ingredients for 2 servings:

  • 200 g Harzer cheese with caraway
  • ½ small onion(s)
  • 1 tbsp chives, frozen or fresh
  • 100 g sour cream
  • 50 g cream cheese, light
  • 1 tsp mustard, medium hot
  • 1 dashes lemon juice
  • Water
  • salt and pepper
  • Paprika powder
  • 1 tsp caraway seeds

Working time approx. 10 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 10 minutes

Finely dice the Harzer cheese and onion. Mix the sour cream with the cream cheese, mustard, lemon juice, and a few tablespoons of water with the spices, then add the onion, Handkäse, and chives. Mix everything well and let it sit in a covered bowl in the refrigerator for several hours (at least 4 hours). It’s best to add 1-2 tablespoons of water every few hours and stir the mixture. Just before serving, stir in another 1-2 tablespoons of water to maintain a creamy consistency. Handkäse tartar tastes divine on fresh bread with sparkling Ebbelwoi or white wine. One serving contains 229 kcal for two portions.
