  • 2 tsp olive oil for frying
  • 2 garlic cloves
  • 6 tbsp olive oil
  • 6 tbsp soy sauce
  • 2 roots
  • 3 spring onions
  • 1 small zucchini
  • 150 g broccoli
  • 1 pointed pepper, red
  • salt and pepper
  • 150 ml vegetable stock
  • Soy sauce

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 45 minutes

Remove fat and tendons from the pork fillet and cut into strips. Marinate with garlic cloves, olive oil, and soy sauce and marinate for at least 1 hour. Clean and wash the vegetables. Finely slice the roots and cut the spring onions into rings. Halve and slice the zucchini. Cut the broccoli into small pieces to reduce the cooking time. Halve the bell pepper, remove the seeds, and cut into strips. Brown the marinated meat without marinade in a pan filled with 2 teaspoons of olive oil. Then remove the meat and set aside. Sauté the spring onions, roots, bell pepper, broccoli, and zucchini in the pan fat. Add about 150 ml of vegetable stock to deglaze the pan. Add the marinade. Simmer for about 10 minutes, then add the meat. Season to taste with salt, pepper, and soy sauce. This dish is best served with basmati rice.
