Ingredients for 4 servings:

  • 2 onions, finely chopped
  • 400 g cheese, hand cheese without caraway and well matured
  • 50 g butter
  • 1 liter vegetable broth or chicken broth, as desired
  • 500 ml apple cider
  • 250 ml cream
  • Salt
  • pepper
  • 1 bunch of chives
  • 100 g dried meat, diced

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Sauté the diced onions in the butter, preventing them from browning. Add the diced Handkäse cheese and melt slowly over very low heat. Slowly pour in the meat broth, followed by the apple cider. Bring to a boil. Add the cream, then do not allow to boil again. Season with salt and pepper. Brown the jerked beef cubes in a pan and add them to the soup along with the chives. Serve immediately. Serve with farmhouse bread.
