Ingredients for 4 servings:

  • 400 g sausage (pork rind)
  • 2 m.-large gherkins
  • 2 eggs
  • 1 m.-sized onion(s)
  • 1 large tomato(s)
  • 1 m.-sized apple
  • 4 tbsp oil (e.g. olive oil)
  • 2 tbsp vinegar (herb vinegar)
  • 1 tbsp parsley or chives

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Recipe from Hesse

Hard-boil the eggs. Meanwhile, dice the pork rinds and place them in a bowl. Finely dice the gherkin, onion, and apple. Deseed and finely dice the tomato. Dice the egg whites. Add all ingredients to the pork rinds. Mix together a dressing from finely chopped parsley, crushed egg yolk, vinegar, oil, salt, and pepper. Mix the dressing with the salad. Let it sit for 1 hour.
