Sweet and sour beans

Ingredients for 2 servings:

  • 500 g beans, green, fresh
  • 1 small onion(s), diced
  • 50 g bacon, streaky, diced
  • 1 tsp margarine
  • ¼ liter broth
  • 2 tsp, leveled flour
  • 3 tsp, leveled salt
  • Water
  • 2 pinches of pepper
  • 2 tsp vinegar
  • 1 tsp sugar
  • 1 pinch of salt

Working time approx. 30 minutes; Total time approx. 30 minutes

no salad, but a warm side dish like grandma and mom

Chop the fresh beans (front and back, middle through), wash. Boil in plenty of salted water (at least 3 tsp salt) for about 15 minutes, then drain in a sieve. You can of course use frozen beans or those from a jar, but I prefer the fresh version, i.e. everything in its own time… In the meantime, finely dice the onions and bacon. First fry the bacon in the melted margarine, then add the finely diced onions until they are translucent. Dust with flour and pour in the stock to make a roux. Season to taste with vinegar and sugar, salt and pepper. Then add the beans, simmer briefly and serve… I think it’s delicious.
