Ingredients for 3 servings:

  • 1 large onion(s)
  • 250 g cheese (Allgäu Emmental), thinly sliced
  • 350 g sausage (Lyoner)
  • 4 gherkins
  • 2 ½ tbsp vinegar (white wine vinegar)
  • 2 ½ tbsp water
  • 4 tbsp oil (sunflower oil)
  • 1 tsp mustard, medium hot
  • Salt and pepper from the mill
  • Sugar
  • possibly chives, cut into rolls

Instructions

Working time approx. 15 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 15 minutes

Sausage – Cheese – Salad

Peel the onion and halve it lengthwise. Then cut it crosswise into strips to create half rings. Add the sliced ​​onions to boiling water and cook for 2 minutes. Then place them in a sieve and rinse them with cold water. Drain briefly. Cut the Emmental and Lyoner cheeses into strips of roughly the same length and width. Fan them out well so that the salad is evenly distributed later. Mix with the onions. Cut the gherkins into small cubes and add them. For the dressing, mix the vinegar, water, oil, salt, pepper, sugar, and mustard. Mix the salad ingredients with the dressing and let it stand for at least 2 hours. Serve the salad with chopped chives, if desired. A classic accompaniment: fried potatoes and Bibeleskäs.
