Chive salad according to grandma's recipe

Ingredients for 4 servings:

  • 4 bunch chives, thick
  • 7 eggs, hard-boiled
  • 100 ml cream
  • salt and pepper
  • Vinegar
  • oil

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Peel the eggs and separate the yolks from the whites. Cut the whites into small cubes. Mix the egg yolks with the cream. Add the oil, vinegar, pepper, and salt and mix until there are no more yolk pieces. I like to use a hand blender for this. Then add the egg whites. Using scissors, chop the chives into a sieve as finely as possible, then wash them in the sieve and let them drain well. Finally, mix the chives with the egg sauce and let it stand for at least 30 minutes. Season to taste. Serve with fried potatoes.
