Ingredients for 2 servings:
- 400 g matjes fillet(s)
- 1 apple, sour
- 1 m.-sized onion(s)
- 2 gherkins
- 6 allspice berries
- 2 bay leaves
- 1 cup of sweet cream, approx. 200 g
- 1 cup sour cream, approx. 200 g
- 1 tbsp sugar
- Cucumber juice
- pepper

First, place the herring fillets on kitchen paper and soak up any excess oil. Then cut the herring into pieces about 3-4 cm in size. In a bowl, combine the sweet and sour cream, add the bay leaves and allspice, and stir in the finely diced cucumber and peeled apple pieces. Cut the onion into half rings and add it with a splash of the cucumber juice and sugar. Mix everything well and fold in the herring. Finally, add a few turns of ground pepper. Cover everything and let it marinate in the refrigerator for at least 24 hours. To serve, boil the potatoes in their jacket potatoes and serve them while still hot with the creamed herring. Since the herring in oil is already salted, there is no need to add more salt. However, since the salt content varies from brand to brand, you will have to decide for yourself whether you need more salt.
